Back in the 1980s, experts grew worried about the health effects of trans fats. These fats are created in industrial processes and increase the risk of developing cardiovascular disease with a very clear positive relationship between their consumption and resulting disease.
But thanks to some solid science and new legislation, trans fats were all but eliminated from food systems in the West. So, what’s the main problem in today’s Western diet?
